Chef/Owner Bradford Heap of the celebrated and award-winning Colterra in Niwot, opened Salt the Bistro in 2009, taking up residence in the landmark Tom's Tavern that closed in 2007. Heap and his wife transformed the old burger joint into a modern and comfortable space, utilizing recycled materials that serve practical uses in some instances, and art in others. The farm-to-table restaurant relies heavily on locally sourced foods and goods that are both good for you, and eco-friendly.
